The clarity of the cup is enhanced by fresh grinding and precise water temperature. Decaffeinated version. The decaffeination process alters the structure of the beans, so the coffee is more prone to over-extraction; for a bitter, dry finish, a slightly coarser grind, a lower water temperature or a shorter extraction time will yield a cleaner result.Preparation tip: Barista’s starting point – 36–42 g of brew from 18 g of ground coffee in a double filter basket, over 25–30 seconds, with water at 90–93 °C. For a sour, thin cup, use a finer grind or a higher temperature; for a bitter, drying aftertaste, a coarser grind, lower temperature or shorter extraction time is recommended. The finer aromas are best appreciated when served black or with a little milk.Storage: Once opened, reseal airtight and store in a dry, cool place, protected from light and strong odours.
