The decaffeinated processing alters the structure of the beans, making the coffee more prone to over-extraction; a slightly coarser grind, a lower water temperature or a shorter extraction time will yield a cleaner result when the coffee has a bitter, dry aftertaste.Preparation tip: Barista’s starting point – 36–42 g of brew from 18 g of ground coffee in a double filter basket, over 25–30 seconds, with water at 90–93 °C. For a sour, thin cup, use a finer grind or a higher temperature; for a bitter, drying aftertaste, a coarser grind, lower temperature or shorter extraction time is recommended. The finer aromas are best appreciated when served black or with a little milk.Storage: Once opened, reseal airtight and store in a dry, cool place, protected from light and strong odours.
