The thickness of the crema is not in itself an indicator of quality: it is influenced by the blend’s composition, freshness, the machine’s pressure settings and the extraction.Preparation tip: A barista’s starting point – 36–42 g of coffee from 18 g of ground coffee in a double filter basket, in 25–30 seconds, using water at 91–94 °C. For a sour, thin-bodied coffee, use a finer grind or a higher temperature; for a bitter, drying aftertaste, a coarser grind, lower temperature or shorter extraction time is recommended. For a long coffee, it is best to extend the espresso with separate hot water; too much water passed through the puck can bring out woody, bitter notes.Storage: Once opened, reseal the pack airtight and store in a dry, cool place, protected from light and strong odours.
