The darker roast dissolves more easily, so it can quickly become bitter and drying if brewed at too high a temperature or for too long.Preparation tip: A barista’s starting point – 36–42 g of brew from 18 g of ground coffee in a double filter basket, over 25–30 seconds, with water at 90–93 °C. For a sour, thin cup, use a finer grind or a higher temperature; for a bitter, drying aftertaste, a coarser grind, lower temperature or shorter extraction time is recommended.
