The actual cup profile is shaped by a combination of grind size, water mineral content, temperature and extraction rate.Preparation tip: A barista’s starting point – 36–42 g of brew from 18 g of ground coffee in a double filter basket, over 25–30 seconds, using water at 91–94 °C. For a sour, thin-bodied cup, a finer grind or higher temperature is recommended; for a bitter, drying aftertaste, a coarser grind, lower temperature or shorter extraction time is advisable. The finer aromas are best appreciated black or with a little milk. When using a vending or automatic machine, it is advisable to adjust the grinder one setting at a time and then assess the result after 2–3 drinks, as the coffee remaining in the grinder delays the effect of the change.Storage: once opened, reseal the pack airtight and store in a dry, cool place, protected from light and strong odours.
